Tour of Taste (13) : India


Indian cuisine encompasses a wide variety of regional cuisines native to India. The range of diversity in soil type, climate and occupations varies the cuisine significantly from each other and use locally available spices, herbs, meat, vegetables, and fruits. Indian food is also heavily influenced by religious and cultural choices, such as Hindu and Jain beliefs, and in particular by vegetarianism. There has also been Persian influence on North Indian cuisine from the years of Mughal and Delhi Sultanate rule. Indian cuisine has been and is still evolving, as a result of the nation's cultural interactions with other societies. 





Butter Chicken

Butter Chicken is the well known Indian food all over the world. Its gravy can be made as hot or mild as you like so it suits most palates. Butter chicken also commonly known as Murg Makhani. It tastes great to serve butter chicken with Kaali Daal (black lentils), Naans and a green salad.


Tandoori Chicken

Tandoori chicken is a popular dish consisting of roasted chicken cooked with yogurt and spices. The name comes from the type of cylindrical clay oven, a tandoor, in which the dish is traditionally prepared. American Presidents Richard Nixonand John F. Kennedy, Soviet leaders Nikolai Bulganin and Nikita Khrushchev, the King of Nepal, and the Shah of Iran are those who enjoyed tandoori chicken while visiting to India.


Chicken Tikka Masālā 

Chicken tikka masala is an Indian dish of roasted chicken chunks (tikka) in a spicy (masala) sauce. The sauce is usually creamy, spiced and orange-colored.


Rogan Josh

Rogan josh (or roghan josh) is an aromatic lamb dish of Persian origin, which is one of the signature recipes of Kashmiri cuisine. Rogan means "oil" in Persian, while josh means "heat, hot, boiling, or passionate".The Kashmiri dry red chillies have form the lovely color of Rogan Josh. It may seem like you will end up with a fiery dish but do not fear, these chillies have 'more bark than bite'! 


Malai Kofta

Malai kofta is a classic Moghul dish. Usually people enjoy this with naan in Indian restaurant.  Kofta's are balls mixed with little spices and some veggies or any choice. Kofta's are usually taste soft and combined in gravies.


Lassi 

Lassi is a popular and traditional Indian drink which originates in the Punjab region. It is made by blending yogurt with water and spices. Traditional lassi a savory drink sometimes flavored with ground roasted cumin while sweet lassi is blended with sugar or fruits instead of spices.


Masala Chai 

Masala chai is a favorable tea beverage prepared by brewing black tea with a mixture of aromatic Indian spices and herbs. Originating in South Asia, the beverage has gained worldwide popularity, becoming a feature in many coffee and tea houses today. 


Imarti 

Imarti is a dessert from Rajasthan and South India made by deep-frying urad flour batter in a kind of pretzel or circular shape, then soaked in sugar syrup. Imarti was considered as one of the items of Raj Bhog (Royal Food Menu) in India. As Mughals expanded there, the popularity of this sweet dish increased in other parts of India.
